Blueberry Oat Bars
INGREDIENTS 1/3 cup maple syrup 2 tsp coconut oil 1/3 cup peanut butter (I used protein powder and mixed to consistency of peanut butter) 1 cup oats 1 cup preferred flour 1 cup blueberries 1/2 tsp cinnamon pinch of sea salt 1/4 cup water Grease or line a loaf tin Over medium heat, add the blueberries and water to the pan. Bring to boil on medium high and then turn down heat to medium low to allow to simmer for 5-7 minutes. Stir every few minutes and slightly mash the berries In a bowl mix all the remaining ingredients together. Reserve about a 1/4 cup of the mixture (for the topping) Pour the oat mixture into a loaf tin and use your fingers to really press it together. Pour the blueberry mixture and spread evenly. Crumble on the remaining oat mixture and press Refrigerate until set
